Ingredients
- .5 cup of red lentils, washed
- 250g of penne pasta
- 1 liter of vegetable broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of marinera sauce
- 1 can of crushed tomatoes
- 3 tsp of dried oregano
- 3 tsp of dried thyme
- pepper and salt to taste
Steps
Making the sauce
Heat a skillet, add the onion and saute until golden. Then add the crushed to tomatoes and both the garlic and herbs. Reduce till most of the water in the tomatoes has evaporated. Finally add in the lentils and marinera sauce, bring to a boil for 10 minutes.
Cooking the pasta
Once the lentils are almost done add the pasta and more water if needed and cook the pasta until ready.
