Lentille carotte

A comforting, mildly spiced lentil stew where green or brown lentils are simmered with carrots and a jammy tomato and thyme base.

Ingredients

  • 1 red onion (diced)
  • 2 sprigs of thyme (or 1 tsp)
  • 1 tbsp of ginger and garlic paste (minced)
  • 1 red chilli (diced)
  • 1 can of crushed tomato
  • 200g of green lentils (washed, raw)
  • 400g of carrots (medallions)
  • 750ml of water
  • salt and pepper to taste
  • 300g of potatoes (optional)

Steps

Sate the vegetables

Set the instant pot to sate mode, cook the union till translucent then add the garlic, ginger, thyme and chili. One fragrant add the tomato and salt.

Cooking the lentils and carrots

Add the green lentils and carrot with 750ml of water or broth. Mix everything together and cook on HIGH pressure for 10 minutes and let it steam for another 10 minutes before reducing pressure. Once completed cook without lid on sate mode for another 10 minutes, stirring occasionally until you have the desired texture.

Steamed Potatoes (optional)

As an optional side you can add steamed potatoes, add 300g of potatoes with enough water to cover the bottom of the instant pot and cook on HIGH for 5 minutes. To finish, cook the potatoes in a skillet with some garlic butter and more thyme.
