Humus

The classic humus, as traditionally made, without any additional oil.

Ingredients

  • 2 cups of dried chickpeas (or 2 cans)
  • .25 cup of tahini
  • 1 tsp of salt
  • 1 clove of garlic
  • 1 tsp of cumin
  • 1 tbsp of lemon juice

Steps

Cook the chickpeas

When not using pre-cooked chickpeas, either soak for 8-12 hours and cook for 25 minutes or cook for 50 minutes on high pressure in an instantpot.

Optionally you can cook the chickpeas with some salt, a few gloves of garlic and a bay leaf.

Blend everything

Place everything in a blender, keep adding aquafaba until smooth.
