Ingredients
- half a cabbage (thinly sliced)
- 1 - 2 carrots
- 1 red bell pepper (diced)
- green onions (sliced)
- 1 can of corn
- 1 can of black beans
- 1 jalapeno (diced)
- 1 tbsp of taco seasoning
- cumin to taste
- half a cup of mayonnaise
- half a cup of sour cream (replace by cashew or yoghurt)
- .25 cup of lemon juice
- 2 tbsp of adobe sauce
- Spicy chips (optional)
Steps
Prepping vegetables
Grate or slice the cabbage, carrots and bell pepper to make a cole slaw. Then dice the jalapeno find and slice the green bell pepper.
The dressing
Mix in a bowl the mayonnaise, sour cream, lemon and adobe sauce. Substitute with cashews or yogurt for a healthier alternative. Add in the spices with the sauce and mix well.
Assembling the salad
Combine everything in a bowl and toss the salad until well mixed. Add as much sauce as is desired.
