Black Bean Salad

A bean coleslaw salad with spicy Mexican flavor.

Ingredients

  • half a cabbage (thinly sliced)
  • 1 - 2 carrots
  • 1 red bell pepper (diced)
  • green onions (sliced)
  • 1 can of corn
  • 1 can of black beans
  • 1 jalapeno (diced)
  • 1 tbsp of taco seasoning
  • cumin to taste
  • half a cup of mayonnaise
  • half a cup of sour cream (replace by cashew or yoghurt)
  • .25 cup of lemon juice
  • 2 tbsp of adobe sauce
  • Spicy chips (optional)

Steps

Prepping vegetables

Grate or slice the cabbage, carrots and bell pepper to make a cole slaw. Then dice the jalapeno find and slice the green bell pepper.

The dressing

Mix in a bowl the mayonnaise, sour cream, lemon and adobe sauce. Substitute with cashews or yogurt for a healthier alternative. Add in the spices with the sauce and mix well.

Assembling the salad

Combine everything in a bowl and toss the salad until well mixed. Add as much sauce as is desired.
