Ingredients
- 1 head of cauliflower
- 2 carrots
- 500g of mushrooms
- 2 tbsp of tomato paste
- 1.5 cup of walnuts (optional)
- 3 cloves of garlic
- 1 red onion
- 2 tsp of cumin
- 3 tsp of salt
- 1 tbsp of (smoked) paprika
- 2 tbsp of Italian seasoning
Steps
Preperation
Using a food processor dice the cauliflower, mushrooms and the onion & garlic. If you are processing the walnuts soak them beforehand as to not get a hard bite.
Cooking
Put a large skillet on the medium heat and add all the vegetables. As soon as the mixture starts losing water turn the pan up to high in order to dry out the vegetables. Once done add and mix the spices and turn off the heat.
Finally mix in the tomato paste & walnuts.
