Ingredients
- 1 block of tofu
- 1 onion (diced)
- 2 cloves of garlic (diced)
- 1 small potato (finely diced)
- .25 tsp of turmeric
- 1 tbsp of nutritional yeast
- .25 tsp of black salt (optional)
- .5 cup of boulion
Steps
Prepping the vegetabels
Was the potato, dice the vegetable and be sure to dice the potato as fine as possible. Take the tofu and break it apart in small, bite-sized chunks. We want this to resemble a scrambled egg and keep in mind that the volume will expand.
Sauteing the vegetables
Due to the potato this has a specific order. Cook the onoin with the potato first. Once the potato starts to soften add in the garlic and tofu after a minute or so and toast the spices.
Making the scramble
Deglace the pag with some broth and in a risotto style, slowly keep adding broth. Taste every few minutes after the first ten minutes until you have the desired consistency. If you want to make it more creamy add some plant based milk.
