Refried Beans

A simple refried beans

Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can or 1 cup of dried kidney beans, cooked and rinsed
  • 1 can or 1 cup of dried black beans, cooked and rinsed
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 2 tsp of cumin
  • 1 tsp of chili flakes

Steps

Cooking the beans (if dried)

Wash the beans to get rid of any dirt and for 25 minutes in the instapot. To add additional flavor add an onion, 4 garlic cloves and some cumin to cook with the beans. Be sure to fish them out afterwards.

Making the refried beans

Heat up a pan and add some oil. Once the oil is warm add the onion and saute. Once the onion is translucent add the garlic and spice, only for a minute. Once done rinse the beans and set aside.

Add some of the vegetable broth to deglaze the pan and add in the beans with just enough water to cover the beans. Put the lid on the pan turn the heat on low. Stir occasionally and add broth as is needed.

After 30-60 minutes your beans should have absorbed a lot of flavor. Mash the beans to desired consistency with a fork.
